Fried Rice with Shrimp

Ingredients
Water (1.5 c)
Pepper (as desired)
Ginger (. 25 tsp ground)
Cayenne pepper (. 25 tsp)
Carrots (. 5 c sliced)
Shrimp (deveined, peeled (4 oz.)
Garlic (1 clove minced)
Low-sodium soy sauce (. 25 c)
Onion (. 5 c chopped)
Sesame seed oil (2 T divided)
Egg (1 beaten)
Shirataki rice (1 c)
Preparation
1-Turn the Instant Pot cooker to sauté and allow it to heat fully. Add half of the sesame oil to the cooker and let it heat before adding in the eggs and scrambling them. When they are finished cooking, remove the eggs and set them aside.
2-Add the remaining oil to the Instant Pot cooker before adding in the onion and garlic and let them cook for about 5 minutes and the onion is brown and soft.
3-Turn off the heat before adding in the shrimp, carrots and rice. Season using the pepper, ginger and soy sauce and ensure everything is well coated. Add in water to ensure everything mixes well.
5-Once the timer goes off, select the instant pressure release option and remove the lid as soon as the pressure has normalized to prevent the shrimp from over cooking.
6-Stir the results thoroughly and let them sit for an additional 5 minutes prior to serving.
7-Serve warm.
