Simple method to make appetizers and salads as a Big chef ! updated 2021
Ingredients
1 bag (10 ounces) fresh baby spinach (about 10 cups), trimmed
2 cups thinly sliced mushrooms
1/4 cup dried cranberries or slivered dried apricots
1/4 cup sliced almonds, toasted
1/2 cup buttermilk
2 tablespoons light mayonnaise
1 tablespoon chopped fresh chives
1 teaspoon each wine vinegar and Dijon mustard
1/4 teaspoon hot pepper sauce
1 clv garlic, minced
1/4 cup shredded blue cheese
Instructions
1.For the dressing, use a blue cheese, such as Stilton, Roquefort or Danish.
2.In bowl, whisk together buttermilk, mayonnaise, chives, vinegar, mustard, hot pepper sauce and garlic; stir in cheese. (Make-ahead: Cover and refrigerate for up to 1 day.)
3.Place spinach in salad bowl; top with mushrooms, cranberries and almonds. Pour dressing over top; toss to coat.
4.Makes 8 servings.
5.Tip: Toast almonds in small skillet over medium heat, shaking pan occasionally, until golden, about 5 minutes.
